
- Fate of Listeria on various food contact and noncontact surfaces when treated with bacteriophage (Bob Reinhard, Ph.D.)

BIOFILMS
PhageGuard Listex reduces Listeria populations in biofilms with 3 – 5 log/cm2. Unlike chemical sanitizers, which oxidize on the surface of the biofilms, phages are able to penetrate into the biofilms and kill Listeria from the inside.
PhageGuard can be used directly on the food, food contact surfaces or in the environment as an additional safety intervention against Listeria monocytogenes.

CHALLENGE
High throughput slicers have transformed deli meat production. However, the nooks and crannies in these intricate machines are difficult to keep clean and can harbor Listeria.
RESULTS
A leading producer of sliced deli meats in Australia took a different approach and uses PhageGuard on its meat slicers. PhageGuard is sprayed at the front and back of the blades prevent contamination of Listeria from one slice to the next. This producer has been 100 percent free from Listeria since implementing our products.
In food processing plants, the common sites for Listeria are floors, drains, conveyor belts, stainless steel equipment and cold rooms.
Listeria monocytogenes has a persistent ability to form biofilms matrices in the food processing environments. Biofilms are difficult to eradicate with chemical sanitizers, especially in areas with food debris.
