The time between exiting the hot dog peeler and packaging is generally short but Listeria is well suited to this production environment. Cold temperatures don’t disturb this bacterium. Despite proper hygiene regimes, the risk of contamination of the production environment is real, as Listeria may prosper in hard to reach nooks and crannies. Every producer of hot dogs lives with this risk. Old World Provisions from Albany New York decided to face it head on, spraying Listex™ into the thermo-formed pouches on the roll stock packaging line to protect the hot dogs from contamination. As the package is sealed and shrunk, the liquid is evenly dispersed around the hot dogs, killing the Listeria.
